Knives for slicing machines and industrial slicers made to measure
The circular knives in slicing machines and industrial slicers cut thin, even slices. They are cleaned every day, yet must remain corrosion-resistant. WSH-Tools makes these knives to your drawing, original sample or dimensions. We supply them as replacement knives for existing machines or as bespoke designs, from just one piece – Made in Germany.

Knife types
Circular knives for slicing machines
Usually hollow-ground on one side. They are resharpened with the machine’s own sharpener.
Circular knives for high-performance slicers
What counts here is minimal radial and axial run-out. Only then does the slice thickness stay consistent, even at high speeds.
Sickle knives
For high-performance slicers, made to drawing or original sample.
Plain or serrated edge
Depending on the product: plain for sausage, ham and meat; serrated for bread and cheese with a rind.
Replacement knives from a sample
If no drawing is available any more, we make the knife from the old one.

What matters in knives for food processing
Corrosion resistance
Knives that come into contact with food are cleaned and disinfected every day. They are also exposed to salt, acid and moisture. Stainless martensitic chromium steels such as 1.4034 or 1.4116 are therefore the usual choice. Chromium alloy steels can also be protected with hard chrome plating.
Edge retention
The heat treatment determines how long the edge stays sharp and how well it can be resharpened. We match hardness and grind to your product and your machine.
Hygiene
Finely ground or polished surfaces are easier to clean, and residues do not stick to them as easily. With sticky products such as cheese, a non-stick coating can help the slices come away cleanly.
Radial and axial run-out
A circular knife that does not run perfectly true and flat cuts slices of uneven thickness and wears on one side. That is why we check the diameter, hole pattern and radial and axial run-out before delivery.
Food contact
On request, you will receive a declaration of conformity for food contact in accordance with Regulation (EC) No 1935/2004.
Replacement knives to fit Bizerba, Graef, Berkel, Ritter, Weber and Treif
We make replacement knives to fit slicing machines and industrial slicers from these manufacturers, using an original sample or dimensions. If your manufacturer is not listed, a sample or the dimensions of the old knife will do. Get in touch.
The brands mentioned are the property of their respective owners. These are compatible replacement knives made by WSH-Tools, not original parts.
Have your slicer blade sharpened
A blunt knife does not need replacing straight away. The WSH-Tools sharpening service inspects your knife and regrinds it as long as there is enough material left. If the diameter is already too small or the edge is damaged, we make a new knife based on the old one. Get in touch if your knife has gone blunt.
Three steps to your quote
- Specify the machine. Manufacturer, model and, if known, the part number of the knife.
- Send dimensions or a sample. We need the outside diameter, thickness, centre bore, pitch circle with holes and the grind side. A photo of the old knife next to a ruler also helps. You can upload everything via the contact form.
- Receive your quote. We will give you the price and lead time once we have reviewed your documents.
The contact form is in German – feel free to write your message in English or German, email us at info@wsh-tools.de or chat with us on WhatsApp in your language: +49 171 4189690.
Frequently asked questions
Do you make replacement knives for slicing machines?
Yes. We make circular knives for slicing machines to drawing, original sample or dimensions, from one piece upwards.
Can I get a replacement knife for my Bizerba or Graef slicing machine?
Yes. We make replacement knives to fit machines from Bizerba, Graef, Berkel, Ritter, Weber and Treif, using an original sample or dimensions. They are not original parts but dimensionally accurate replacement knives made by WSH-Tools.
Do you also make knives for household slicing machines?
Yes. We also make replacement knives for household appliances from a sample or dimensions, from just one piece. Ideally, send us a photo of the old knife with its dimensions and tell us the manufacturer and model of the machine.
Which dimensions do you need for a replacement knife?
The outside diameter, the thickness and the diameter of the centre bore, plus the pitch circle with the number and size of the fixing holes, and the grind side. Please also tell us the manufacturer and model of the machine. A photo of the old knife next to a ruler is a good start.
Which diameters are possible?
All sizes. We work to your dimensions – from small knives for household machines to large circular knives for industrial slicers, for example Ø 250 mm or Ø 300 mm.
Do you also make sickle knives for slicers?
Yes. Alongside circular knives, we also make sickle knives for high-performance slicers, to drawing or original sample.
Which steel is suitable for knives used in food processing?
Usually stainless martensitic chromium steels such as 1.4034 or 1.4116. Chromium alloy steels with hard chrome plating are an alternative. All common knife steels and special steels are possible. We choose the material according to the product being cut, the cleaning regime and the machine.
Plain or serrated edge – which is right?
For sausage, ham and meat, a plain edge is the usual choice. A serrated edge grips better on products with a firm rind or crust, such as bread or some types of cheese.
Can I have my slicer blade reground?
Yes, as long as there is enough material left. We inspect the knife and tell you whether regrinding or a new knife makes more sense.
Can the knives be coated?
Yes. WSH-Tools.de offers all common PVD coatings for its tools. For knives that come into contact with food, hard chrome plating and non-stick coatings are also an option. We match the surface finish to the product being cut and the cleaning regime.
Can I get a declaration of conformity for food contact?
Yes, on request we supply a declaration in accordance with Regulation (EC) No 1935/2004.
What is your minimum order quantity?
Just one piece, with no minimum order value – from a single knife to a set for several machines.
